Can an ice cream sandwich actually be made with healthful ingredients?

The answer is a lip-smacking yes, thanks to Kristin Cavallari, who posted a delectable batch of cookie sandwiches on Instagram.

“Just made ice cream sandwiches with coconut bliss ice cream,” the actress/fashion designer wrote. “The cookies are vegan and gluten free but taste amazing.”

Cavallari — who’s pregnant with baby number two and clearly making smart food choices — followed a trusty recipe from Erin McKenna at BabyCakes, a vegan bakery in NYC. Instead of using butter and eggs to make the cookies, the recipe calls for applesauce, a favorite trick of health-conscious bakers. It also nixes white flour for a gluten-free, vegan version and throws in some fiber-rich flax meal for texture.

The final smart substitution goes between the baked cookies: Coconut Bliss, which has the rich taste of ice cream but since it’s made with coconut milk, has absolutely no dairy, soy or gluten.

If you wrap each sandwich individually before freezing, you’ll always have dessert on hand!

Gluten-Free Chocolate-Chip Cookie Sandwiches

1 cup coconut oil
6 tbsp. applesauce
1 tsp. salt
2 tbsp. pure vanilla extract
1¼ cups evaporated cane sugar
2 cups gluten-free all-purpose baking flour
¼ cup flax meal
1 tsp. baking soda
1½ tsp. xanthan gum
1 cup vegan chocolate chips
1 pint dairy-free ice cream, such as Coconut Bliss

1. Preheat oven to 325 degrees. Line two baking sheets with parchment paper.

2. In a medium bowl, mix together the oil, applesauce, salt, vanilla and sugar. In another medium bowl, whisk together the flour, flax meal, baking soda and xanthan gum.

3. Add the dry ingredients to the wet and stir until a grainy dough is formed. Gently fold in the chocolate chips until evenly distributed throughout the dough.

4. Scoop the dough onto the prepared baking sheets, spacing the portions 1 inch apart. Bake the cookies on the center rack for 15 minutes, rotating the sheets 180 degrees after 9 minutes. The finished cookies will be crisp on the edges and soft in the center.

5. Let the cookies cool completely on a wire rack before putting a scoop of ice cream in between two cookies.

6. Wrap sandwiches individually in plastic wrap before putting in the freezer.

Hahhah this cookie recipe is from the Babycakes cookbook! I know it by heart, use it all the time. Funny she is claiming it’s hers

Krista on

Really, Kristin Cavallari? This cookie recipe looks suspiciously *exactly* the same as the chocolate chip cookie recipe in my Babycakes NYC cookbook. Nice work in the kitchen claiming others recipes. Next time change a few words at least.

its probably makes you vaccine free too.

Natalie on

Ladies, chill. Kristin never said she created the recipe! Why do people alwayyyyyys read into thing. PEOPLE wrote the article. It’s simply the recipe Kristin uses. Not created! Uses! Oy vey…

In case anyone from People reads this, we get that Kristin’s publicist has you in her pocket. (I mean, why else would a D list reality “actress” get so many uninteresting stories?) But, continuing to promote someone to the public who is spreading doctor proven dangers to children is reckless. Promote the Kardashians, or whoever else. Not someone who is putting my family and others in harm’s way by promoting kids to not have necessary vaccines. Please. Look into it yourself if you don’t believe me, but there is a resurgence of measles and other preventable dangerous diseases because of this movement that she is one of the most public supporters of.

LoL!! Gotta love the vaccine jokes on this page. People (not the magazine) crack me up!

Marcia on

Why is Cavallari in People so much lately? She has done nothing of note except get pregnant.

stef24 on

Ah, appears as though someone is following in the steps of Kate Gosselin and using existing recipes but claiming them as her own!!!!!!

Hannah on

Everyone shut up about the vaccines! She can do what she wants! The article said nothing about vaccines so let it go.

How on earth did people start thinking that gluten-free equates with healthy. Gluten-free diets are for people with Celiac disease who are forced to avoid gluten. They need to work to get the proper nutrients into their diet while avoiding items that contain gluten.

Juno on

All she said was “Just made ice cream sandwiches with coconut bliss ice cream. The cookies are vegan and gluten free but taste amazing.”

Where in that is she claiming the recipe is hers? You people need to relax and eat a cookie. The worlds not ending because she didn’t say where she found the recipe. For all you know a friend gave her the recipe and she didn’t even know where it came from.

Courtney on

I’m gluten and dairy free as well but I hardly think this constitutes a healthy treat. Not that I wouldn’t eat it!

Wow! So inspired! Pretty sure a 5-year-old can take two cookies and put ice cream in the middle!

Please stop trying to make Kristin happen. She’s nothing more than a useless bully who used to be on some horrible MTV reality show…please send her back to the gutter she came from!!!!

While this is a nice recipe if you have a specialty diet (ie food allergy or religious dietary restriction), vegan does not automatically make your diet healthier. Butter in moderation contains healthy fat oils, which are a component of a healthy balanced diet. Eggs are a protein, also part of a healthy diet. And numerous dietitians, nutritionists, and health professionals continue to try to disprove the gluten-free is healthier myth. If you don’t have celiac disease, then you need gluten in your diet. Ginnifer Goodwin and others have had to stop vegan lifestyles because of the adverse effects on their health. I applaud Kristin’s healthy food choice, but not the mixed message it and this article send.

As a person with a background in nuitrition, I have to laugh when I see all these gluten free recipes and products. Gluten is only a problem for those who have Celiac disease. Avoiding it does not cause weight loss and has no health benefits for the general population. The same is true about vegan eating. The most healthy diet for a person with no digestive issues is a balanced one, that includes dairy, grains and healthy fats.

Europa21 on

What a hypocrite. Schilling her “healthy” recipe and then risking her children’s health and others by not vaccinating them. Looks like she copied this recipe anyway, which even adds to the fact she’s an utter airhead.

Gleeza on

Why is this person featured so prominently on this site? She’s was on some reality show at one time or another? She hasn’t done anything since which is probably why I’ve never heard of her.

User on

No one “needs” gluten in their diet! LOL Welcome to the wheat propaganda folks. I have been gluten free for almost 2 years and NO I do not have celiacs but I am highly gluten sensitive. And last time I checked, I decide what I put in my body. If you have a problem with going gluten free, don’t do it!! But I’m not sure why you care that I am!!

Why is People trying to make Kristin Cavalarri happen?! STOP!!!

huuuhh on

i just cant get past that this chick who is anti vaccine was basically drunk or drugged up on every episode of her mtv shows….

Lori on

Kristen is not taking credit for the recipe. She snapped a picture and said she made them. Feels like people can’t wait to pounce on her. Who really cares…They look good and it is a healthy recipe. People need to relax!

Aud on

IS there a reason Kristin Cavallari always appears on People? Is she doing anything spectacular now? I’m so confused…

Jill on

You’re seeing more of her lately because she has a new TV show on E! We all acted like idiots in High School….let’s not assume she is the same person now as she was 10 years ago!

veronica on

She’s so Boring!!!!
