Gluten-Free and Oh-So-Good: Kristin Cavallari’s Ice Cream Sandwiches

Can an ice cream sandwich actually be made with healthful ingredients?

The answer is a lip-smacking yes, thanks to Kristin Cavallari, who posted a delectable batch of cookie sandwiches on Instagram.

“Just made ice cream sandwiches with coconut bliss ice cream,” the actress/fashion designer wrote. “The cookies are vegan and gluten free but taste amazing.”

Cavallari — who’s pregnant with baby number two and clearly making smart food choices — followed a trusty recipe from Erin McKenna at BabyCakes, a vegan bakery in NYC. Instead of using butter and eggs to make the cookies, the recipe calls for applesauce, a favorite trick of health-conscious bakers. It also nixes white flour for a gluten-free, vegan version and throws in some fiber-rich flax meal for texture.

The final smart substitution goes between the baked cookies: Coconut Bliss, which has the rich taste of ice cream but since it’s made with coconut milk, has absolutely no dairy, soy or gluten.

If you wrap each sandwich individually before freezing, you’ll always have dessert on hand!

Gluten-Free Chocolate-Chip Cookie Sandwiches

1 cup coconut oil
6 tbsp. applesauce
1 tsp. salt
2 tbsp. pure vanilla extract
1¼ cups evaporated cane sugar
2 cups gluten-free all-purpose baking flour
¼ cup flax meal
1 tsp. baking soda
1½ tsp. xanthan gum
1 cup vegan chocolate chips
1 pint dairy-free ice cream, such as Coconut Bliss

1. Preheat oven to 325 degrees. Line two baking sheets with parchment paper.

2. In a medium bowl, mix together the oil, applesauce, salt, vanilla and sugar. In another medium bowl, whisk together the flour, flax meal, baking soda and xanthan gum.

3. Add the dry ingredients to the wet and stir until a grainy dough is formed. Gently fold in the chocolate chips until evenly distributed throughout the dough.

4. Scoop the dough onto the prepared baking sheets, spacing the portions 1 inch apart. Bake the cookies on the center rack for 15 minutes, rotating the sheets 180 degrees after 9 minutes. The finished cookies will be crisp on the edges and soft in the center.

5. Let the cookies cool completely on a wire rack before putting a scoop of ice cream in between two cookies.

6. Wrap sandwiches individually in plastic wrap before putting in the freezer.

Really, Kristin Cavallari? This cookie recipe looks suspiciously *exactly* the same as the chocolate chip cookie recipe in my Babycakes NYC cookbook. Nice work in the kitchen claiming others recipes. Next time change a few words at least.

In case anyone from People reads this, we get that Kristin’s publicist has you in her pocket. (I mean, why else would a D list reality “actress” get so many uninteresting stories?) But, continuing to promote someone to the public who is spreading doctor proven dangers to children is reckless. Promote the Kardashians, or whoever else. Not someone who is putting my family and others in harm’s way by promoting kids to not have necessary vaccines. Please. Look into it yourself if you don’t believe me, but there is a resurgence of measles and other preventable dangerous diseases because of this movement that she is one of the most public supporters of.

How on earth did people start thinking that gluten-free equates with healthy. Gluten-free diets are for people with Celiac disease who are forced to avoid gluten. They need to work to get the proper nutrients into their diet while avoiding items that contain gluten.

While this is a nice recipe if you have a specialty diet (ie food allergy or religious dietary restriction), vegan does not automatically make your diet healthier. Butter in moderation contains healthy fat oils, which are a component of a healthy balanced diet. Eggs are a protein, also part of a healthy diet. And numerous dietitians, nutritionists, and health professionals continue to try to disprove the gluten-free is healthier myth. If you don’t have celiac disease, then you need gluten in your diet. Ginnifer Goodwin and others have had to stop vegan lifestyles because of the adverse effects on their health. I applaud Kristin’s healthy food choice, but not the mixed message it and this article send.

As a person with a background in nuitrition, I have to laugh when I see all these gluten free recipes and products. Gluten is only a problem for those who have Celiac disease. Avoiding it does not cause weight loss and has no health benefits for the general population. The same is true about vegan eating. The most healthy diet for a person with no digestive issues is a balanced one, that includes dairy, grains and healthy fats.

No one “needs” gluten in their diet! LOL Welcome to the wheat propaganda folks. I have been gluten free for almost 2 years and NO I do not have celiacs but I am highly gluten sensitive. And last time I checked, I decide what I put in my body. If you have a problem with going gluten free, don’t do it!! But I’m not sure why you care that I am!!
