Chef Justin Simile of N.Y.C. restaurant Il Buco Alimentari e Vineria has a recipe for ricotta that he thinks can hook anyone on homemade cheese.
Ricotta is a great cheese to start with, says Similie, calling the process “super easy.”
The most important thing is to begin with the right ingredients. You may need to go to a cheesemonger to get items like rennet, an enzyme used in cheese making, but the most essential ingredient is the simplest: milk.
The reason behind that is simple as well: “Using a really good quality milk will ensure that you have a really good flavored ricotta,” Simile says.
