Stuffed Breakfast Avocados Are So Simple and Yet So, So Good

Stuffed Breakfast Avocados

4 avocados
5 oz. smoked salmon, cut into thin strips
16 baby spinach leaves
8 eggs
Kosher salt, to taste
Freshly cracked black pepper, to taste
1/2 tsp. crushed red pepper flakes
Chopped chives, for sprinkling

1. Preheat oven to 425°F.
2. Halve the avocados and remove the seed. If the hole looks small, scoop out some flesh until it’s large enough to hold an egg.
3. Place the avocado halves skin-side down on a cookie sheet, and line the holes with strips of smoked salmon and spinach leaves. Crack one egg into a small bowl, then spoon the yolks and egg whites into the avocado hole. Season with salt and black pepper.
4. Bake for 15-20 minutes, or until the eggs are set but the yolks are still runny. Sprinkle with chili flakes and chives, and serve.

Yea…I was wondering about the spinach…it’s in the video behind the salmon, but they never use it? Weird that no one would catch it…

Does the avocado soften up? Soft mushy or creamy avocado with runny egg yolk? Not sure about this one. Or, cook it too long and the egg yolk will be dry.

1) Maybe the egg should be pre-poached BEFORE sitting it inside of the avocado, and do not put any of it in the oven.

2) The avocado could be cut into cubes.
3) Then put the cubes of avocado into their shells.
4) Put the poached egg on top
5) Cut into tiny thin strips and use as garnish on top
6) Sprinkle crushed red pepper flakes, OR course ground Black Pepper

Your recipe called for salmon underneath egg.
Not sure what happened here.
I’ll stick with avocado omelette. Same taste. Easier to make.

It’s a quiet Monday morning, I am sitting here with my coffee in one hand and reading the recipe for stuffed avocados and dreaming of a wonderful breakfast taste! And, all of a sudden, my ears are assaulted by the voice of a screaming child in a totally unsolicited Wells Fargo video commercial!! Talk about inconsiderate consideration, I literally spilled my coffee on my computer desk, narrowly missing my keyboard and mouse pad!! I know that the advertising drives the website but, use some COMMON SENSE once in awhile, PLEASE!! I am quite sure that other seniors, who indulge in their food fantasies like I do, will agree that it is a shock to the senses to be confronted with a shrill little kid’s voice when one is so deep into thought and not expecting such an onslaught of sound. I don’t deal with Wells Fargo and I will not consider dealing with them after this incident. I am only one potential lost custiomer

Much better to back the mixture in custard cups with avocado slices on top. That way all your egg mixture doesn’t run out before it is baked

So use of the spinach is not, like others have noted, not shown in the video demo. Does it go under or over the salmon… or both over AND under the salmon. I’m betting under the salmon since the slightest amount of heat will wilt it and you will hopefully have the tips of spinach showing for a splash of green. Just guessing.
